Dan Tat
Dan Tat is a Chinese egg tart with a flaky crust and a soft egg filling on the inside. This recipe is from Hong Kong and is very easy and simple.
INGREDIENTS
- 2 cups cake flour
- ½ cup powdered sugar
- 1 pinch salt
- 1 stick butter
- 4 egg yolks
- 1 dash vanilla extract
- 5 tbsp sugar
- ¾ cup hot water
- ½ tsp vanilla extract
- ¼ cup evaporated milk
DIRECTIONS
For the crust:
Sift the cake flour, powdered sugar, and salt together in a large bowl.
Crack 4 egg yolks into a bowl. Pour only 2 tbsp of egg yolks into the bowl.
Mix in softened butter and vanilla extract until all ingredients and well combined.
Wrap the dough in plastic wraps and leave in the fridge for 30 minutes. (Make sure not to mix too much!)
For the filling:
In a bowl, mix hot water and sugar until sugar is combined. Let it cool then pour in the rest of ingredients. Cool in fridge.
Set oven to 400℉.
Take out the dough. Proceed to divide the dough into 16 balls. Oil a cupcake tray and press 1 ball to the tray. Make sure not to press too thin.
Use a spoon and pour filling in 80%.
Put in oven and bake for 15-20 minutes.
