Apam Balik

Apam Balik is a Malaysian pancake. This pancake is filled with cream corn, peanuts, and butter. It's sweet and very delicious.

INGREDIENTS

  • 2 tsp baking powder
  • 1 cup of water 
  • 1 tsp vanilla extract 
  • ½ cup of sugar 
  • 1 cup of rice flour
  • 2 cups all-purpose flour 
  •  ½ tsp salt
  • 1 large egg 
  •  ½ tsp baking soda
  • Toppings:
  • sugar
  • cream corn
  • butter
  • crushed peanuts

DIRECTIONS

  1. In a large bowl, whisk in an egg. Add in all the dry ingredients and vanilla extract.

  2. Slowly pour in the water, and mix the batter till all ingredients are combined well.

  3. Cover the bowl and let the batter rest for 2 ½ - 3 hours.

  4. Heat up a nonstick pan. Do not put oil in as it will be hard for the batter to spread.

  5. Turn the heat down to medium-low heat.

  6. Pour ¼ - a ⅓ cup of batter in. Evenly spread out the batter in a clockwise motion. Let it heat up for about 1 minute till bubbling forms.

  7. Sprinkle sugar and crushed peanuts on top. Scoop some cream corn in and ½ tbsp of butter in. Leave the batter to turn golden.

  8. Fold the pancake in half.

  9. Serve and Enjoy!
